Lavish X Edge - The Art of Pairing Event

It was a chic night at The Polygon Gallery where we, along with our bar partners Lavish Liquid hosted a luxurious 6 course pairing event. We are immensely proud of this magical evening.  From the incredible room vibes and design, to the exceptional culinary and cocktail service experience never delivered before!

PAIRING #1

Cedar Sour
rye, cedar + thyme syrup, lemon

Hamachi

citrus salt-cured, coastal mushroom + samphire salad, smoked char caviar, kombu infused oat crème

PAIRING #2

Brown Buttered Sazerac
brown butter fat washed cognac + rye, pastis, cane syrup, peychaud bitters, lemon oil

Marea
tomato scented lobster crudo, blistered tomato, lobster + foie jus gras

PAIRING #4

Spirit Trail
bourbon, chai syrup, lemon, peach, aromatic + orange bitters

Betta
roasted + glazed duck breast, crispy leg confit w/ spiced carrot puree, orange caraway vinaigrette

PAIRING #3

Vodka Lemon Sorbetto
vodka, limoncello, lemon, chamomile syrup, clarified w/ heavy cream

Dandelion
soy caramel poached + brown butter roasted salsify, “soubise,” hay, whey

PAIRING #5

Spirit Trail
bourbon, chai syrup, lemon, peach, aromatic + orange bitters

Betta
roasted + glazed duck breast, crispy leg confit w/ spiced carrot puree, orange caraway vinaigrette

vodka, espresso, vanilla, chocolate bitters, vegan foamer

STP
miso toffee, raw + roasted spiced pear, dark chocolate crunch, toasted miso crème legère
